Fruit Tarts

Ingredients:
- sugar cookie dough, 16 oz. (homemade or store bought)
- softened cream cheese, 8 oz.
- 2 cups powdered sugar
- 1 Tbsp honey
- 1/2 tsp vanilla extract
- 1 pinch of salt
- assorted fruit: strawberries, raspberries, kiwis, blueberries, mandarin oranges
Directions:
- Add one tablespoon of cookie dough to each cup in a mini muffin pan. Press into the cup to create a well in the center.
- Bake according to recipe instructions or until very lightly browned.
- Allow tarts to cool in pan for five minutes, then remove from pan and cool completely.
- While the crusts are cooling, prepare the filling by beating the cream cheese, powdered sugar, honey, vanilla extract, and salt.
- Chop fruit into smaller pieces, if necessary.
- Assemble fruit tarts by filling each tart shell with cream cheese mixture and then top with fruit.
- Can be served immediately but best if refrigerated for one hour first.
