Mini Poppyseed Muffins

Ingredients: 

  • 1 3/4 cups flour 
  • 1 cup plain protein powder
  • 1/4 tsp baking soda 
  • 2 Tbsp lemon poppyseeds
  • 1/4 cup sugar
  • 1/4 cup honey 
  • 2 Tbsp lemon zest
  • 1 cup greek yogurt 
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp salt 
Directions: 

  1. Preheat oven to 350 F. 
  2. Combine dry ingredients: flour, protein powder, poppyseeds, and salt. Set aside. 
  3. Beat sugar, honey, lemon zest, yogurt and butter until creamy. 
  4. Add eggs one at a time, and continue to beat. 
  5. Mix in lemon juice and vanilla extract. 
  6. Add dry ingredients into wet ingredients slowly, mixing in between. 
  7. Pour muffin batter into mini muffin tin. 
  8. Bake 14-16 minutes, or until very lightly browned.
