Mini Poppyseed Muffins

Ingredients:
- 1 3/4 cups flour
- 1 cup plain protein powder
- 1/4 tsp baking soda
- 2 Tbsp lemon poppyseeds
- 1/4 cup sugar
- 1/4 cup honey
- 2 Tbsp lemon zest
- 1 cup greek yogurt
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
- 1/4 tsp salt
Directions:
- Preheat oven to 350 F.
- Combine dry ingredients: flour, protein powder, poppyseeds, and salt. Set aside.
- Beat sugar, honey, lemon zest, yogurt and butter until creamy.
- Add eggs one at a time, and continue to beat.
- Mix in lemon juice and vanilla extract.
- Add dry ingredients into wet ingredients slowly, mixing in between.
- Pour muffin batter into mini muffin tin.
- Bake 14-16 minutes, or until very lightly browned.
